Ingredients
For the Cake
- 2½ cups all-purpose flour
- 2½ teaspoons baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ¾ cup unsalted butter, softened
- 1¾ cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole milk
For the Cinnamon Buttercream
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 2 to 3 tablespoons heavy cream
- Pinch of salt
For the Cinnamon Sugar Coating
- ¼ cup granulated sugar
- 2 teaspoons ground cinnamon
- 2 tablespoons melted butter
Instructions
1. Prepare the Cake Batter
Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans. Whisk together the flour, baking powder, salt, and cinnamon. In another bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla. Alternate adding the dry ingredients and milk until just combined.
2. Bake
Divide the batter evenly between the prepared pans. Bake for 28 to 32 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pans for 10 minutes before transferring to a wire rack.
3. Make the Buttercream
Beat the softened butter until smooth. Gradually add the powdered sugar, cinnamon, vanilla, salt, and heavy cream until light and fluffy.
4. Assemble the Cake
Spread a generous layer of cinnamon buttercream between the cake layers. Frost the top and sides evenly.
5. Add the Churro Finish
Brush the outside of the frosted cake lightly with melted butter. Mix the cinnamon and sugar together, then gently sprinkle or press it over the cake for the signature churro coating.
6. Serve
Decorate with cinnamon sticks, churro pieces, or a drizzle of caramel sauce if desired. Slice and enjoy.
Expert Tips
Use room-temperature ingredients for the fluffiest cake. Don't overmix the batter, as this can make the cake dense. Allow the cake layers to cool completely before frosting to prevent the buttercream from melting.
Storage
Store the cake covered at room temperature for up to 2 days or refrigerate for up to 5 days. Bring to room temperature before serving. Individual slices can be frozen for up to 3 months.
Serving Suggestions
Serve with vanilla ice cream, dulce de leche, caramel sauce, hot chocolate, coffee, cinnamon latte, or fresh berries for an extra-special dessert.
Recipe Variations
Fill the cake with dulce de leche, add chopped pecans, use cream cheese frosting instead of buttercream, drizzle with chocolate ganache, or make cupcakes using the same batter.
