Instructions

1. Prepare the Fruit

Wash the figs and raspberries thoroughly. Chop the figs into small pieces and finely chop the orange after removing any seeds.

2. Combine Ingredients

In a large heavy-bottomed pot, combine the figs, raspberries, orange, ginger, lemon juice, and powdered pectin. Stir well.

3. Bring to a Boil

Bring the mixture to a full rolling boil over medium-high heat while stirring frequently.

4. Add Sugar

Add the sugar all at once and stir continuously until dissolved. Return the mixture to a full rolling boil and cook for exactly 1 minute while stirring constantly.

5. Skim Foam

Remove the pot from the heat. Skim off any foam from the surface using a spoon.

6. Fill the Jars

Carefully ladle the hot jam into sterilized jars, leaving about ΒΌ inch of headspace. Wipe the rims clean and seal with lids.

7. Process (Optional)

For long-term storage, process the jars in a boiling water bath for 10 minutes according to safe canning practices. Otherwise, refrigerate after cooling.
